Today is the day that I make my first eight dozen pierogi's for commercial use. I am so excited and nervous at the same time. I timed myself last night peeling 10 pounds of potatoes. 14 minutes flat! So now I know how long that part of the process takes. Whew! I also made a cabbage filling with sauteed onions in butter, salt, pepper and garlic. Pretty tasty!
